Waste No-thing

Weekly meal prep is also weekly clear out the fridge – items that were made and not consumed, expiry dates and forgotten in the back of the fridge items.

Like you I HATE WASTING FOOD! Particularly produce. As we’re in our growing season, I know how long it takes and the attentiveness that is required from seed to harvest.

Today I found a head of cauliflower, organic nonetheless that got forgotten. Considering how long cauliflower lasts, it’s probably been 2 weeks forgotten.

In this 2022 climate, groceries along with many other things, is starting to cost more. What a waste it’d be to compost this head of cauliflower. It had started to turn a tad spotty, yet I wasn’t prepared to just chuck it.

I carefully trimmed and scraped away the “spotty” bits, cut it into uniformed pieces then tossed it in some always readily available ingredients:

~3 tablespoons of melted butter
~1/2 cup of freshly grated Parmesan cheese
~1 generous teaspoon paprika
~ generous amount of freshly grated black pepper
Toss these 4 ingredients into the cauliflower, making sure to mix well and cover it evenly.
Bake in a 400 degree preheated oven for 20 min

Voila! Great for a snack, lunch or dinner side, and most importantly, not wasted!
